Thread: Tailgating recipies (please sticky)

    I always make bean dip and the night before. Its better if it sits for 24 hours.

    1 can refried beans
    1 package taco seasoning
    16 oz sour cream
    1 can green chilis
    5-6 diced scallions
    2-3 diced tomatoes
    2 packages shredded cheese (taco mix, cheddar, anything you like)
    1 can jalepenos
    olives (if you like them)
    2 pie tins

    mix beans and taco seasoning, spread evenly on bottom of pie tins. spread even layers of sour cream on top of bean mix. layer remaining ingredients on top. tastes best with doritos. soooo good!

    For members with a different taste, swordfish kabobs:

    marinade:
    juice of 2 limes
    juice of 2 lemons
    1 clove garlic
    extra virgin olive oil (enough to coat swordfish)
    around 2 tablespoons fresh chopped parsley
    1 tablespoon cilantro
    red pepper flakes
    salt
    pepper

    You'll also need:
    1.5-2 pounds swordfish
    grape tomatoes
    red onion
    your favorite pepper (red pepper works, i like habaneros)
    6 oz teQuila (make sure it's the good stuff, and make sure it's clear)

    Combine all marinade ingredients except teQuila in mixer. Cube swordfish into good sized bites, place in marinade bag and pour marinade over. Chill for 6 hours or better yet overnight. Cut peppers, onion into big bites. Before the game, pour teQuila into bag of swordfish. Skewer veggies and swordfish and grill for 2 minutes on each side. Youll wanna eat all of them!




    Pasta salad:

    1 box spirals
    6 scallions, diced
    1 box cherry tomatoes, cut in half
    1/4 pound pepperoni, cubed (small but big enough to stick with a fork)
    1 small jar roasted red peppers, diced
    olives, diced
    feta cheese, crumbled
    1 package Good Seasoning italian dressing, prepared according to directions
    salt
    pepper

    Pretty simple. Cook spirals al dente and let cool. Combine all ingredients except dressing in (very) large bowl. Chill overnight. When ready to serve, mix in italian dressing, coating everything completely. Excellent side dish.

    Heres a better chicken wing soup recipe (my favorite anyway):

    Ingredients
    1 onion chopped
    2 ribs of celery
    3/4 cup of milk
    2 cups diced cooked chicken
    4 oz velveeta
    1/2 tsp celery salt
    1/4 cup butter
    1/4 cup of flour
    3/4 cup chicken broth
    1/2 cup of hot sauce
    1/2 tsp cayenne pepper
    1/2 tsp garlic salt


    In a 2 qt sauce pan at medium heat- sautee onions and celery in butter until tender. Stir in flour, slowly wisk in milk and broth. Stir in remaining ingredients and simmer over low to medium heat, stir occasionally until cheese has melted.

    This recipe makes a thicker soup than the previous one I posted. This will give you about 4 bowls.

    Well the menu was selected. The food is prepped. Tomorrow is the big day.

    Bacon Burger Dogs
    Stuffed Jalapenoes (wrapped in bacon)
    "Bills" Beans


    Bills beans:

    3 cans of baked beans (I use Boston Beans)
    1 Jalapeno chopped.
    5 Strips of bacon Cooked
    1 clove of garlic chopped
    1/2 a can of mushrooms
    1 onion chopped
    1 teaspoon of both salt and pepper
    1/2 a teaspoon of Italian spices.
    1 can of Honey brown lager

    Mix together everything except for the beer. And let sit over night.
    When ready to cook, pour in can of beer. Simmer untill beer has evaporated.
    Enjoy.

    I've used this for a few years. It's a nice little compliment for the other food you're serving. Very inexpensive and very tasty.

    I posted this recipe on another thread but I didn't realize there was a true stickied tailgate recipe thread. That bean dip by Moulds looks good, I'm going to make it for next Sunday. Those Bills Beans look good too, going to make that the week after with grilled franks. Anyhow, here it is, great stuff or I wouldn't have stuck to it all these years, I hope you like it too.

    Here is the ultimate wing sauce, rumour has it that this is the Anchor Bar's Original sauce from way back. Either way, I've been using this recipe for at least 15 years, the card its on is stained from hot sauce lol.

    I'm not going to get into the "how to" part on frying wings, just be Sure to use peanut oil and let them drain or it'll be a soppy mess.

    The Sauce:

    3-6 oz's of Franks Hot Sauce (might be called Durkee's in some parts still, I don't know).

    1/2 stick of Margarine (not butter!)

    1 tablespoon of white vinegar

    1/8 to 1/4 teaspoon of cayenne pepper powder

    1/4 teaspoon of red pepper powder

    1/8 teaspoon of garlic salt

    1/8 teaspoon of black pepper

    1/4 teaspoon worchestshire sauce

    1 to 2 teaspoons of tabasco sauce

    Mix all the ingredients in a small sauce pan over low heat (Low!) until the margarine is completely melted, then stir until everything is blended into the sauce. Get the sauce off of the heat at this point or you may begin sacrificing some of the flavour.

    Fry the wings in peanut oil, drain, then (those cheap lemonade pitchers with the top that turns open or closed work great) place in pitcher with sauce, however much you like, shut top, shake until coated.

    I like really chunky bleu cheese dressing and celery sticks.

    Give this one a try people, you will not be disappointed. You can make the sauce in advance and use it within a few days too.

    Well I am cooking a nice pork tenderloin which is marinating in herb and garlic for the night. Slicing up some Portabella mushrooms, which will be thrown on the grill just as we slice up the tenderloin and will be served on a nice costanza roll toped of with a slice of colby cheese.

    Yeah one of my buddies had two of them. And I watched as he gained 7 lbs. right on the spot.

    I too tried raybone's Bacon burger dogs. We cooked them up before the game, and we celebrated the victory with another batch after the game.

    I don't think I gained 14 lbs...lol. Thanks for the recipe

    I'm thinking but all the recipe's I know are just Italian lol... but I suppose they could be prepped prior to game and brought....

    I'll do some thinking to see if I can think of one to contribute.

    Buffalo Burgers
    2 lb. lean ground buffalo meat (900grams)
    1/2 cup butter, softened (125ml)
    1 x green onion, finely chopped
    2 tbsp cilantro, chopped (30ml)
    2 tbsp parsley, chopped (30ml)
    1 x small hot red thai chili pepper, finely minced
    Salt and pepper to taste

    Directions:
    Buffalo Burgers
    In a medium bowl, combine butter, green onion, cilantro, parsley and hot red pepper.
    On a piece of plastic wrap or waxed paper, form the mixture into a cylinder, about 1 inch (1.5 cm) in diameter. Wrap and close the ends. Place the butter cylinder in the freezer to solidify.
    Shape ground buffalo into 6 large balls. Cut frozen butter into six ¼ inch (4mm) discs.
    Freeze remaining butter for use another day.
    Make a depression in the center of each buffalo patty. Place a frozen butter disc into each meatball and seal inside. Shape meat into patties about 1-inch (1.5 cm) thick, keeping the butter well surrounded by buffalo meat.
    Preheat the barbecue to 375°F/190°C or medium high heat.
    Oil the grill and season the buffalo burgers with salt and pepper.
    Grill the burgers 6 minutes per side.


    Once again License to Grill came up with this one.
    I'm gonna fire it up next weekend.
